15/Sushi, sashimi, eel and other fish.

With wasabi or horseradish Shizuoka, a true delight.


After sashimi of udo (sea urchin) that we have identified, here probably at the bottom left, the sashimi of fugu, but we're not sure, as we let the choice to the chef who offered their favorite pieces, we heard afterwards that they love the heart & ovaries among others ... the consistency of some bite was amazing anyway ...
If you don't like raw fish, you can try tempura and taste the oysters one !

16/Rice and noodles "slurp"

3 things, never plant chopsticks in the rice = "death" and always aspire loudly noodles (unlike their discretion for the rest) if not that means it is not good, do not cut them because they symbolize longevity in life.
To be tasted too: senbei, crispy wafers made from rice, soy sauce basted & surrounded with a sheet of seaweed or covered with sesame seeds.

17/Edamame

Boiled green soy beans salted to eat as appetizer, the art is to suck on the beans (without noise this time) to get the taste of salt that is on the pod, which should not be eaten. Mind you it took us half a jar and a nearby more discreet table to realize this...

For lovers, nattō is a traditional Japanese food made from soybeans fermented with Bacillus. We tasted it for breakfast, mixed with a raw egg, bon appetit.


18/Saké and Asahi bier

Sake is served hot or cold, the term is used for many different alcohols, on the other side, beer (Sapporo or Asahi) is always served in a frosted glass...


19/Vending machines

You can find those machines everywhere, even in the very small mountain villages, you will not die of thirst, € 1.10 for a drink (Japan is not always expensive).


20/(Green) tea and tea ceremony

Basically this ceremony called Chanoyu and practiced by Buddhist monks is to prepare green tea, produced from the matcha. This ritual, first buddhist, then imported to the Court and perfected by a Tea Master, has become an unvoidable habit leading to calm and meditation.
According to a prescribed and rigorous order, the Master proceeds with the preparation of the reception room. He purifies the service that will contain the famous beverage, hot the water at a precise temperature and pours it over the mixture giving birth to delicate foam on the surface of the tea. There are several schools and each has its subtleties, but the celebration is the same for all: Harmony, respect, purity and peace of mind.
The price is quite high, so reserved for lovers.

You find in most hotel rooms a teapot with a quite complete range of green teas and sweets such as umeboshi: a plum dried and salted, Japan is one of the few countries to confit fruits in salt, once the surprise effect gone, it's good.

21/Desserts

The desserts are super kawaii but a little savorless, we indulged ourselves with kit-kat lemon (and other nice tastes) and the Godiva ice cream, which you find everywhere, in all the metro stations also! The best flavor: green tea of course...


22/ Small bars and restaurants where you eat at the bar.

Like in the street of Omoide Yokocho (in the district of Shinjuku), there are a lot of small restaurants where you can eat at the bar, often small portions that you order at the same time or one by one according to your hunger and cravings, you eat bonded to each other, the best place to get acquainted. 23/Dinner at the japanese way.

Tested in Yudanaka, a small mountain village in the province of Yamaguchi, sitting barefoot on cushions placed on the floor, ready to taste the local cuisine, you do not always know how to stand but so Zen that you forgot to put your shoes back when leaving ...

Recipe for chicken noodle soup.

Preparation time: 25 minutes
Ingredients (for 4 people):
• 400g udon noodles (radius Asian)
• 600 grams of minced chicken
• 1 can sliced bamboo shoots
• 1 pack of dried shiitake mushrooms (Japanese mushrooms)
• sambal oelek sauce and yaki sauce (radius Asian)
• sesame oil
• olive oil
• 2 chicken bouillon cubes
• 1 bunch of spring onions
• 2-3 cloves of garlic (optional)
Rehydrate the mushrooms in a bowl of warm water, cut spring onions (and garlic, optional).
In a pan, heat 2 tablespoon of olive oil with 2 teaspoon of sesame oil (and garlic cloves, optional). Brown the chicken. In the middle of cooking, add 2 teaspoon of sambal oelek, mushrooms and the bamboo shoots.
Bring to boil a large pot of water, add bouillon cube and noodles. Cook for 5 minutes. Add to preparation, 4 tablespoon of yaki sauce and young onions. Serve immediately in a large bowl.
